Many people will only use charcoal grills as they feel charcoal cooking produces better taste in meats. Charcoal can create a high temperature for searing, but also can be used for low temperature grilling. You can use a charcoal grill for indirect grilling, but it will be a bit cumbersome and not leave you with a lot of grilling surface to cook on.  


Charcoal grills also can double as a meat smoker.


Charcoal grills come in all sizes and shapes. They range from small covered “kettle” grills with adjustable-height cooking grids, to huge kettle grills with domed lids high enough to cook a whole turkey or chicken, to huge powder-coated steel models.


Basic units sell for $50 to $100; deluxe models sell for $400 or more.
